Ghee is produced by removing water (about 20%) and milk solids from pure extra butter (85% fat) during the process of rendering over a live fire over wood.

One of the main advantages of ghee is that it does not burn when frying. Unlike vegetable oils and butter, which become carcinogenic when burned, ghee is composed primarily of short-chain saturated fatty acids that do not oxidize at room temperature or during frying. Therefore, ghee is considered the most useful for cooking, promoting its absorption and removal of waste products from the body.

In terms of its molecular structure, ghee differs from other animal fats. When reheating, all possible harmful impurities are removed from the original product, but the following remains:

vitamin E is a powerful antioxidant;
vitamin A – which is not found in any other edible oil except ghee;
vitamin D is the main assistant in the absorption of calcium and phosphorus from food and maintaining a strong immune system;
