Compared to coffee from other Central American countries, this Nicaraguan coffee is less acidic and uses an expensive wet method to process it. Although local beans are rarely certified, coffee from Nicaragua is considered organic. However, this is not due to concern for the environment or the purity of the product - farmers simply do not have the money for expensive chemical fertilizers.
