Preparation for using the barrel:
A new barrel must be filled for several days with water, changing the water once a day, this will wash away excess tannin - a tannin that gives a special oaky, bitter taste to expensive cognacs and wines. There is too much of it in a new barrel, so you need to soak it for at least a week.
On the first day, the water will acquire a brownish tint (like tea), after a week of soaking. the water becomes clear.
When soaked, oak expands and closes all the pores and crevices of the product.
It is advisable to store the first extract for no more than 2-3 months. During this period, try the drink little by little, and you need to catch the moment when a slight pleasant tartness appears. And immediately drain the drink. After all, this astringency is only pleasant to the taste at first; the longer the exposure time, the more the astringency will increase until it turns into bitterness. Such a drink is often unknowingly called baseboard, and people try to get rid of it and distill it. But few people know that this dark baseboard, if left in a barrel for half a year to a year (depending on the volume of the oak barrel), magically turns back into beautiful whiskey. An oak barrel converts all substances into sugars and other elements that give the drink a unique taste, color and aroma.
